NOMS! That's what I'm talking about.
A light lunch of leftover noodles with fresh tomato, cucumber, capers and sundried tomatoes.
Colorful . . . flavorful . . . satisfying . . . I threw it all together and had an awesome lunch!
1 Cup of Tomatoes, chopped
1 Small Cucumber, chopped
1/4 Cup Chopped Sun Dried Tomatoes
2 TBSP Capers
1 Drizzle of Olive Oil
1/4 Cup Balsamic Vinegar
Coarse Salt and Fresh Ground Pepper, to taste
1 Cup Noodles
Mix all ingredients, put in a container and let marinate until ready to eat. A good, healthy lunch.
