Beef is beef, you know. Beef comes, so Beef is real.

In some form or another, the bane of any wife's existence is the mother-in-law.  I happen to love my MIL . . . she's fantastic.   It's not what she does that causes me grief . . . it's hubby's childhood memories of her cooking.

There is no doubt that I'm a great cook.  Hubby's ever enlarging physique (and mine) is evidence of that.  But, what I have a problem with is duplicating a meal based on what he remembers as opposed to an actual recipe.  Trust me, it ain't easy.

Stuffed peppers are particularly daunting . . . I still haven't worked that one out yet . . . but I'm getting there.

His mom's roast beef sandwiches?  I can get pretty darned close and I've actually made them better . . . simply by adding American cheese.

Mom-in-law's Left-over Hot Roast Beef Sandwich  

4 Slices Cooked Sliced Roast Beef 
2 oz. American Cheese (Optional)
4 Slices Hearty White Bread
2 Tbsp. Butter

Melt butter in a skillet.  Warm the roast beef slices in the butter.  Dip the slices of bread in the pan juices and place on plate juice side up.  Lay a slice of roast beef on two of the halves.  Add a slice of cheese, if desired.  Cover with the second half of the bread, juiced side down.

Cut into quarters.  This is so that you don't pull the whole piece of beef out with the first bite.  Think of them as sliders!


Really . . . enjoy!  Because it's REALLY good!

Except I haven't quite figured out how to cut them into the perfect little triangles like my MIL did . . . suck it up sweetie, it doesn't change the taste.  Or, maybe not.
