Afternoon Delight - Lovin' Leftovers

You’ve got your nom on . . . your tummy’s growling.  Whatcha gonna make for lunch?  You open the fridge . . . you spy leftovers.  Mmmm . . . what to do?

Whip ‘em up into something yummy!  Literally . . .

What I had  . . .
  • 3 Cups Hot Mashed Potatoes
  • 2 Egg Yolks
  • 1 Cup Sour Cream
  • 2 Cups Kielbasa, Diced
  • 2 Egg Whites
  • Salt
  • White Pepper
  • 2 Slices American Cheese

Preheat oven to 350°F
Beat egg yolks with mashed potatoes and season with salt and pepper
Add sour cream and kielbasa

Beat egg whites until stiff and fold into potato mixture

Place in a buttered casserole, top with cheese slices and 30 minutes.
 Quick easy and NOM-dilly-icious!
