Colombian Guacamole





I love guacamole; it's fresh, cool and flavorful. AND easy to make!

The main ingredient in guacamole is avocado; which is a fruit by the way.  Don't shy away from avocados.  They're high in fat, it's true, but it's good for you fat.  But they are also very nutrient dense.




Colombian Guacamole


1 Large Ripe Avocado , Peeled and Pitted
4 Tablespoons Fresh Cilantro, Chopped
3 Tablespoons Sweet Onion, Chopped
1 Tablespoons Serrano Chiles, Seeded and Chopped
1 Fresh Lime, Juiced
Coarse Kosher Salt


Combine avocado, cilantro, green onion, serrano chiles and lime juice in a food processor. Puree until smooth. Add water or lime juice to avocado mixture by tablespoonfuls if needed and blend until thick sauce forms.

Transfer to small bowl; season to taste with coarse salt and pepper and more lime juice, if desired. 

Guacamole can be made 2 hours in advance. Cover and chill.

Next to Myself I Like BVD Best


As far as underpants go . . . men's underpants . . . I personally prefer briefs or boxer briefs.  Boxers simply don't show enough . . . uhm . . . stuff.  Commando works too . . . I mean, that really and truly shows of the maximum amount of stuff.  


So as I contemplate my preference in under garments I am hearkened back to the television advertisements of my youth . . . 



The one I remember the most were the BVD commecials.  I began to wonder what BVD stands for?  Is it some random arrangement of letters?  Doubtful.  Does it stand for "back ventilated drawers"?  Plausible yes.


I know that theory sounds like something I randomly pulled out of my butt, but it's not really.  When you consider how long BVD's have been around.  The company was founded in 1876 in a time when under clothes known as long johns with drop seat in the backside were common.  


Another questionable hypotheses is that BVD stands for "body vest doodads" . . . well, you know what?  I'm not going there.


Actually, the acronym is simple enough.  It was named for the three gentlemen who owned the company that manufactured these garments.  They're names? Bradley, Vorhees & Day.  Mystery solved.


By the way . . . Fruit of the Loom purchased the BVD brand in 1976.





However, as an aside, it's interesting to note that long johns were also known as union suits.  Again, people not unlike myself have nothing better to do than ponder the origin of underwear, have theorized that union suits were so called  because supposedly General Grant accepted Robert E. Lee's surrender wearing nothing but his long underwear.  An amusing anecdote, but untrue.  The "union" in "union suit" most likely a natural association to the "unified" one-piece design of the garment.







Avocado and Feta Cheese on Toast




1 Small Baguette
1 Avocado
Juice of 1/2 a Lime
2 Teaspoons Chopped Mint
1/2 Cup Feta Cheese
Extra Virgin Olive Oil
Coarse Salt and Freshly Ground Pepper



Slice baguette in half lengthwise, drizzle with olive oil and place in a 400 degree oven until lightly brown (5 to 10 minutes).


While the bread is in the oven, peel the avocado and scoop out the flesh with a spoon and put in a small bowl.


Mash the avocado with a fork and mix in the lime juice and mint. Crumble your cheese and fold it into the avocado mixture, leaving some bits chunky.


Spread the avocado mixture onto your toast and top with salt, pepper and a drizzle of olive oil.

I've got a problem . . . but I'm not the only one


I have come to the realization that I am, in fact, an addict.  My drug of choice?  Caffeine.

Of course, I've known that I have a problem for some time now.  Several months ago I got a brainiac idea that I was going to quit cold turkey . . .  stop drinking coffee, tea, soda . . . the works.  Within 2 days I had a brutal headache . . . by the third day I thought my head was going to explode.  On day four . . . as the zombies were munching on my bleeding brain . . . I succumbed and had a cup of coffee.  Aaaah . . . sweet relief.  So, yeah . . . I’ve got a problem.






And then recently a friend (who's name has been changed to protect the guilty) of mine posted on Facebook that he was out of coffee and the world might possibly be coming to an end.  You see . . . he’s got a way bigger caffeine monkey on his back than I do.  WAY!

It was then that I realized how deeply my addiction . . . and my hubby’s . . . ran.

How does one run out of coffee?  I don’t know how it’s even possible.  You’d have to make a real, concerted effort to go through all of the coffee/caffeine options in my house.  Especially, coffee.

We've got tea and soda and even a few Red Bulls floating around.  But coffee?  That we have in spades!  Let me start from the bottom and work my way up  . . . we have instant tubie things and coffee singles; both of which I really don’t like much at all but certainly will do the trick in a pinch.  I’m pretty sure I have some of that international coffee powdered stuff stashed in the pantry.  I have Keurig cups . . . I would never have bought one of those things for myself but it was a good gift and an excellent backup.  I have a can of ground coffee stashed in the camping gear.  And I always . . . ALWAYS . . . have at least 4 pounds of roasted whole bean coffee in the house at all times . . . usually more like 10 pounds.   I also have a couple pounds of green coffee beans and I even know how to roast them. I have an electric grinder and a hand crank grinder for the whole beans.  I have a regular 12-cup drip coffee maker, a single cup drip coffee maker, a percolator, a drip coffee maker that works on a stove top or over a fire, and  for the direst of emergencies a French press. 


Yeah, you could say I have my bases covered.  Oh, yeah.
























Spicy Cucumber-Avocado Soup


Cool, light, refreshing . . . a perfect summer side



1/2 Firm-Ripe California Avocado
2 Or 3 Kirby Cucumbers
1 (8-Ounce) Container Plain Greek Yogurt 
3 Tablespoons Chopped Fresh Chives
1/2 Lime, Juiced
1 Teaspoon Salt, or To Taste
1 Teaspoon Chopped Fresh Jalapeño Chile with Seeds
1 Cup Small Ice Cubes


Peel and pit avocado. Cut cucumbers into 1/2-inch pieces.  Place all ingredients in a blender and blend on high until very smooth, about 1 minute.


Serve in a chilled bowl. Garnish with additional avocado and chopped chives, if desired.
