The pie . . . such as it was . . . began as umble pie. The umbles being what we, today, would refer to as offal . . . heart, liver and entrails. Who would make a pie out of the scraps? Those who had naught and relied on the goodness of their masters. . . a person who was had no choice but to humble himself before his betters The servants of a manor were forced to eat the umbles, often served in a pie, while the lord ate the meat.
