If you say 'gullible' VERY slowly, it will sound like green beans



I've been harvesting green beans from my garden by the handful. We were doubtful in the beginning that we'd end up with any beans at all.  Our bean plants took a licking early on . . . the garden rabbits loved to nibble them to the nubs when they were young plants.  Happily we're getting a modest harvest to enjoy!  It's not much but it's something.

Green beans are the yummiest when fresh.  




Just pinch the ends off and there should be a string attached to them, take it off.  



You can blanch and freeze them.  They taste wonderful!























Here are three ways I've made fresh green beans . . . all delightful in their own right.  I hope you like garlic!

Oven Roasted Green Beans:

This recipe is simple and delicious - good served warm or chilled.  

What you need:  Green Beans, Minced Garlic,  Coarse Ground Salt and Pepper,  Olive Oil (just enough to coat the beans)

What to do:  Toss all the ingredients together, roast them in a 400 degree oven until they start to brown.  About 15 - 20 minutes.

Sautéed Garlic Green Beans

This recipe is light and flavorful with a wonderful blend of flavors.  

What you need:  Green Beans, Minced Garlic, Parsley, Tarragon, Course Ground Salt and Pepper, Olive Oil

What to do:  Blanch the beans, about 4 minutes, and immediately transfer to a bowl of ice water.  Do this in small batches.  Just before serving, heat oil in a large skillet over medium heat. Add garlic and cook, stirring constantly, until fragrant, about 30 seconds. Add the green beans and stir. Add parsley, tarragon, salt and pepper and cook, stirring, until heated through, about 1 to 3 minutes.  Enjoy!

Breaded Fried Green Beans

Crisp, crunchy, snacky food . . . or as a side dish. . . yum!

What you need:  Green beans, an Egg, Corn Meal, Flour, Coarse Ground Salt and Pepper, Oil for Frying.

What to do:  Heat enough oil to shallow fry the vegetables (not immerse them).  Mix a 50/50 mix of corn meal and flour.  Dip the green beans in beaten egg, sprinkle with salt and pepper, dredge in the flour mixture.  Fry until crispy brown.  Enjoy!
